You're more likely to suffer adverse effects if you consume high amounts of one of the fat-soluble vitamins than if you consume too much of a water-soluble vitamin, since only fat-soluble vitamins are stored in your body. Extra amounts of water-soluble vitamins are typically excreted. The fat-soluble vitamins A and D are the most likely to cause toxicity symptoms if you consume them in high amounts.

Recommended Intakes and Limits

Adults need at least 600 international units of vitamin D each day, but shouldn't consume more than the tolerable upper intake level of 4,000 international units, unless they do so under a doctor's supervision. The recommended dietary allowance for vitamin A is 700 micrograms per day for women and 900 micrograms per day for men. The upper limit you shouldn't exceed for vitamin A is 3,000 micrograms per day.

Toxicity Symptoms

Consuming excessive amounts of vitamin D can cause your body to absorb too much calcium and lead to calcium deposits in your organs, kidney stones, confusion, constipation, nausea, poor appetite and vomiting. Vitamin A toxicity can cause blurred vision, loss of appetite, irritability, nausea, hair loss, dry and itchy skin, headache, bone pain, drowsiness and liver damage.

Avoiding Vitamin A Toxicity

You're most likely to experience toxicity symptoms if you take vitamin A supplements regularly in amounts above the UL, as you're unlikely to get too much from foods. However, the type of supplement you choose affects your toxicity risk. Preformed vitamin A, or retinol, is more likely to cause toxicity than beta-carotene, so choosing supplements containing mainly beta-carotene is safer than consuming those high in retinol. However, even high amounts of beta-carotene can cause adverse effects, turning your skin an orange color and potentially increasing cancer and heart disease risk for smokers or former smokers, according to the Office of Dietary Supplements.
