What's better than fruit for dessert? Two fruits, combined in a calorie- saving sweet. One of my favorite combinations: apple and pineapple. Definitely iconoclastic! They grow on very different kinds of plants, in locales far apart from each other, so there's no tradition for combining them. Papaya with pineapple seems more geographically appropriate -- or apples and pears. Nevertheless, the tastes and textures of these two fruits together work a special sweet magic that seems to cut down on the need for added sugar. As a simple experiment, try spooning a little undiluted pineapple juice concentrate into unsweetened applesauce -- or vice versa: thawed undiluted apple juice concentrate into fresh or canned unsweetened crushed or diced pineapple. Or try making some homemade applesauce with unsweetened crushed pineapple added. Here's how:

3pounds cooking apples, cored, peeled, sliced

1can (16 ounces) juice-packed crushed pineapple, undrained

Combine ingredients; don't add any other liquid. Simmer until soft, 8 or 10 minutes, then remove from heat and cool. Store in covered jars in the refrigerator or freezer. (Sweeten to taste before serving with a few drops of honey or low-calorie sweetener, if desired.) Makes 16 servings, 70 calories each; honey is about 20 calories per teaspoon.

1can (8 ounces) juice-packed crushed pineapple

1/2teaspoon ground ginger

6baking apples, cored

Drain pineapple well; reserve the juice. Stir ginger into pineapple. Spoon pineapple into cored apples. Stand apples in a non-stick baking dish just large enough to hold them and pour on reserved pineapple juice. Bake uncovered, about 20 to 25 minutes in a preheated 350-degree oven, basting often with pan juices. Makes 6 servings, 105 calories each. At only 130 calories a serving, here's an "apple pie" that even dieters can enjoy. It tastes a bit like strudel, thanks to its upper crust of skinny phyllo pastry. Also known as "filo," frozen ready-to-thaw-and-use strudel leaves are sold in the supermarket freezer case. Use what you need and refreeze the rest; it will last indefinitely.

2sheets phyllo pastry, thawed

3apples, peeled, cored, thinly sliced

1can (8 ounces) juice-packed crushed pineapple, undrained

3tablespoons honey

1tablespoon cornstarch

2teaspoons apple-pie spice

1teaspoon vanilla extract

2teaspoons melted butter

Spray the bottom of a non-stick 9-inch round or square cake (or pie) pan with cooking spray until slick. Line pan with of pastry torn into pieces, reserving remaining for top crust. Stir together remaining ingredients, except butter, and spoon into pan. Cover apple mixture with 2 layers of torn pastry. Brush each layer lightly with melted butter. Tuck edges of pastry into pan. Bake uncovered, in a preheated 400-degree oven for 20 to 30 minutes, until pastry is flaky. Makes 6 servings, 130 calories each.
